When the Salt Lake County Health Department issued an order that mandated closing dine-in service for all bars and restaurants on March 16, 2020, the effect was devastating. For many locally owned businesses, revenue dropped to nearly zero, while bills and payroll stayed the same. The new constraints forced companies to adapt quickly and many pivoted to a takeout or delivery operation that was wholly unfamiliar. These snapshots of those operations are a testament to the resilience of vital worker communities and the generous support of a customer base who isn’t giving up.
